Salad for Dessert?! Yes Please!

Who doesn’t love to indulge in things when the desserts come around? We all do! So here is a dessert recipe that you can indulge in while still keeping it healthy and your tummy happy!

Prep time Total time

10 mins 10 mins

  • 2 pounds seedless grapes (combination of green and red)

  • 2 5.3-ounce containers dairy-free vanilla yogurt alternative (i.e. Silk Dairy-Free Yogurt)

  • 1 cup chopped pecans or walnuts (omit for nut free)

  • ½ cup sweetened shredded coconut (can substitute unsweetened, if desired)

  • 2 tablespoons light brown sugar (can substitute for coconut sugar, if desired)

  1. Wash the grapes and remove the stems.

  2. Place the grapes in a large bowl. Add the vanilla yogurt alternative and nuts (if using).

  3. Gently stir together until evenly combined.

  4. Add the coconut, and gently stir till combined.

  5. Sprinkle the top of the salad with the brown sugar, and gently stir. Do not completely mix in the brown sugar.

  6. Chill in fridge for at least 30 minutes. Store any leftovers in an airtight container in the refrigerator for up to 2 days.

  • Use a clear glass bowl to serve the Grape Salad- the colors of the grapes complimented by the toppings will make for a great aesthetic!

  • Pair this dessert with Pallini Limoncello- an italian staple, used as a digestif between the main course and dessert. This liqueur is actually gluten-free!
